My first blog post. I’ve wanted to start a blog for a really long time and today finally decided to give it a try. So bare with me as I figure things out. The blog is about my love of food and sharing that love with my family one meal at a time. I’d thought I’d start off with a post about what has been said to be the most important meal of the day, breakfast. This has become one of my favorite breakfast meals. The egg muffin sandwhich and hash brown. Simple but super delicious.
- 1 Egg
- 1 English Muffin
- 1 Slice of American Cheese
- 1 Slice of Canadian Bacon
- 1 Frozen Hash Brown
To make the breakfast sandwhich, I use a small pan to cook the egg. I place a little bit of margarine in the pan to keep the egg from sticking. I have a silicon circle egg shape to cook the egg in so it will have that nice circle shape. I bought it from Walmart. While the egg is cooking I cut and toast the english muffin in the toaster. Once it’s toasted I place a slice of cheese on top and place the cooked egg on it. Then I cook the canadian bacon in the same skillet. This takes a quick minute. Then place on top of the egg. Top off with the top part of the muffin to complete the sandwhich. For the hash browns I just buy those already made from the store and bake them in the oven per the directions.
Making this meal yourself is a little bit healthier than stopping at Mcdonalds. The total calories is about 470 (320 for the sandwhich and 150 for the hash brown). Not bad for under 500 calories. This has also become a favorite of my 5 year old daughter. She even eats this meal for dinner.
