Thanksgiving has passed and after eating turkey, dressing, and the other sides for a few days, its time to get back to regular food. So this morning I made one of my favorite breakfasts: Bacon, Egg, & Cheese Sandwich with a bowl of cereal. My favorite bacon to use is the Burgers Smokehouse Peppered Thick Cut bacon. I discovered this bacon about 10 years ago and have been eating it ever since. I like to cook my bacon in the oven. I’ve tried cooking bacon various different ways: in the skillet, microwave, and oven. In my opinion it turns out the best when its cooked in the oven. It does take longer than the other methods, but to me it tastes the best. Its crisp but not crumbly. Just the right texture. I usually cook it at 375 degrees. I’ve found that 350 is too low and 400 is too high, 375 seams just right. Or at least for my oven. It typically takes about 15 – 20 minutes to cook. After cooking I place the bacon on a plate with paper towels to drain some of the grease off. While the bacon is draining, I toast my bread and cook the egg.
My favorite bread is the Brownberry Oatnut. Its a pretty hardy bread and makes delicious sandwiches. Two slices of bread has 4 grams of fiber. As I get older, paying attention to how much fiber I consume has become more important. Overall, I try to stay away from just plain white bread. For the cheese I use the old fashion Kraft American Cheese. For a basic sandwhich, it is the best. I use different cheeses (like swiss, provolone, etc.) if I am being a bit fancier, but for a traditional sandwich I use Kraft American Cheese. I place the cheese on top of the toasted bread before adding the egg. That way the egg will help melt the cheese. I fry the egg either in a skillet or griddle. I make sure the yolk is fully cooked, especially if I’m making one for my daughter. I’m careful not to feed her uncooked eggs. In the past I use to love my egg to be a bit runny. In the past few years, I make sure I fully cook the egg.
Top the egg with the bacon. I use two slices of bacon for each sandwhich. I just break each one in half so it fits nicely on the sandwhich. I also top mine with two slices of tomato and miracle whip.
I serve the sandwhich with a bowl of cereal. The cereal I like to eat with this sandwich is Frosted Flakes with sliced bananas. I’ll warn you, this is not a low calorie breakfast. Its pretty hardy. It is however a nice break from the holiday foods.
