Chicken Wings Two Ways

One of my favorite things to eat is chicken wings.  I could probably eat it once a week.  I like to try making them with different sauces and marinades.  This week I tried a beer marinade.  I usually marinade my chicken wings in italian dressing but this week I thought I’d try something different.

The  Beer Marinade:

  • 4 lbs of Chicken Wings
  • 3 cans of beer (whatever beer you like)
  • 3 tbps brown sugar
  • 3 tbps kosher salt

Marinade at least for two hours, overnight is best.  I remember taking a cooking class and the instructor gave this tip: when using liqueur in recipes, use something that you would actually drink.  Then you know you are picking something good or at least what you will like.  So for this recipe I used what I had, Bud Light.

For the chicken I’ve bought in the past the frozen wings and for some reason they always seem really fatty. So for this recipe I just bought some regular wings and cut them into drummies and wings myself. When you are ready to cook them, preheat the oven to 450 degrees.  You need to cook the wings at a temperature at 400 degrees or higher to ensure the wings bake up crispy.  Season the wings before placing on the baking rack.

Seaonings:

  • 3 tsp Onion Powder
  • 3 tsp Garlic Powder
  • 3 tsp Paprika

They won’t be as crispy if you place them directly on the pan.  Bake for about 30 minutes.

Take them out and toss them in whatever sauce you like.  Since I wanted the wings to be two way, I used buffalo wing sauce and barbecue sauce.  For the buffalo sauce I used Franks Red Hot Wings and for the barbecue sauce I used Sweet Baby Rays.  Then place the wings back on the baking pan and cook for another 15 mintues or until the wings are done (165 degrees).

The barbecue wings will have a great sticky coat, which I really like.  For the buffalo wings, when I pulled them out I tossed them in the buffalo wing sauce for a second time.  Then its time to serve.  I added a side of ranch dressing to dip the buffalo wings.  I also paired them with my favorite side salad.  This meal was such a hit there wasn’t much left for leftovers.  The next time I make wings, I want to do something with sriracha hot chili sauce.  I already bought it and another pack of wings.  I think I’ll make those next week.
