I like the idea of the slow cooker. That you can just set it and forget it. It still makes me really nervous to plug it in, turn it on, and just let it do its thing. I don’t know about other people’s slow cooker, but mine seems to cook things super fast. I even bought a second slow cooker thinking that something was wrong with the first one I bought. That one cooked foods pretty fast as well. So if I do decide to use it, I just know to cut down the cooking time. Over the last few years I have been on a mission to find about 6 go to slow cooker recipes. This is one of my go to recipes, BBQ Pulled Chicken.
For this recipe you don’t need to marinate the chicken, but since I already had chicken breasts marinated in italian dressing in the freezer, I just used those. I thawed the chicken overnight. For your slow cooker, it does work out well to use frozen meats, but I wanted to drain off the italian dressing. I placed the chicken in the slow cooker and cooked it on low for about 3 hours. Remember, my slow cooker cooks foods pretty fast, in my opinion. After about 3 hours, I took out the chicken and shredded it with a fork. I also poured out most of the liquid in the slow cooker. I then placed it back into the slow cooker and covered the chicken with my favorite barbecue sauce. I like Sweet Baby Rays. I cooked it for another hour. Then it was ready to eat.
I made two different dinners with the BBQ Pulled Chicken. The first night I made them into BBQ Pulled Chicken Sandwhichs with baked sweet potato fries. The second night I made them into BBQ Pulled Chicken Nachos. Both meals were delicious. I love when I can use something to make two different meals. I still have some leftover that I will make into more sandwhiches. You can also freeze the leftovers to pull out for a later date, if you are like me and don’t really like eating the same meal too many times in a row. Enjoy!
