Breakfast Shortcut: Waffles & Berries

With having a busy life, I can’t always make meals from scratch.  Since we try to eat most meals at home, to get meals on the table I leverage convience foods.  Breakfast is one of the meals of the day that I tend to leverage convience foods the most.  My daughter loves waffles.  Most mornings I make her waffles with nutella.  The waffles we like are Eggos Thick & Fluffy Homestyle.  They are really good and you only have to pop them into the toaster.  Ever year I consider buying a waffle maker, but talk myself out it.  One, its another kitchen gadget that I’d have to find a place to store, and two, realisticly how many times would I really pull it out and use it.  So instead, I buy already made Eggo waffles.

This recipe was inspired by a trip to my favorite store, Wal-Mart.  They were sampling a mix of various berries.  They topped the berries with honey and whipped mixed berry cream cheese.  It was really good.  So I got the idea that it would make a great topping for waffles.  So that night I bought some berries.


  • Eggo Thick & Fluffy Homestyle Waffles
  • Strawberries, sliced
  • Raspberries
  • Blackberries
  • Blueberries
  • Honey
  • Philadelphia Whipped Mixed Berry Cream Cheese

I cooked the waffle in the toaster.  Topped it with a cup of berries, drizzled with honey, and dabbed about 2 tbps of cream cheese.  My daughter loved it.  This was a great way to add in some healthy fruits.  With the rest of the berries I made about 9 one cup containers of mixed berries to eat as snacks during the week.  I will wait till I’m ready to eat it to drizzle the honey on top.  I also portioned out the rest of the cream cheese into 2 tbps portions to top the berries.  I hope you try and enjoy!
