Meatloaf Dinner


A few weeks ago I did some meal prepping.  One of the items I prepped was a meatloaf.  This was the first time I pre-made the meatloaf and froze it.  I took it out of the freezer, and once it was defrosted put it in a pan to cook.  It took about an hour for the meatloaf to cook.  I cooked it for 40 mintues at 375 degrees.  I took it out of the oven at 40 minutes and poured some barbecue sauce on top.  I use to top my meatloaf with ketchup and one time I tried it with barbecue sauce, and have been making it that way ever since.  If you have never tried it, you should.  The sauce I used is Blues Hog.  It has a really rich taste.  I cooked the meatloaf for another 10 mintues.  At 50 minutes, I took it out of the oven and poured off some of the cooked off fat, and then poured more barbecue sauce on top.  I cooked it for another 10 minutes, since I wanted the sauce to have a sticky consisency.  After an hour I took out and let it rest for another 10 mintues.  Preparing the meatloaf in advance cut down a good 10-20 minutes, since I only needed baking time.  Half way through the cooking time, I made some Kraft mac and cheese for the side.  It was enough for that nights dinner and the next night.  To make the meatloaf I mixed the following ingredients:

  • 2 lbs of ground beef
  • Meatloaf seasoning packet, whichever brand you like
  • 1 Egg
  • 1/2 cup milk
  • 1/2 cup of plain bread crumbs

Mix together and shape into a loaf.  The seasoning packet will have directions on them, but I always use 2 lbs of ground beef and add an egg, milk, and bread crumbs.  The meatloaf always ends up pretty tasty.  This makes about 6-8 servings.  If you want to save on some calories, instead of having mac and cheese use broccoli instead.  The green giant broccoli with cheese sauce is really good and low in calories.  This is one of my favorite dinners.  I really like meatloaf.  I love ground beef and I’m always looking for new recipes that uses ground beef.
